Souvlaki

Amount: 2 persons
Time: 1 hours (24h marinade)

Ingredients:

Screwer marinade:

  • 350 grams chicken or pork filet
  • Paprika powder 1 tsp
  • Lemon 1 piece
  • Bay leaf 2 pieces
  • Rosemarin 1 tsp
  • Oregano 2 tbsp
  • Olive oil 2 tbsp
  • White wine 1 tbsp
  • Garlic cloves 3 pieces
  • Salt & pepper

Toppings:

  • Cucumber 1 piece
  • Tomato 2 pieces
  • Red onion 1 piece
  • Parsely 5 grams
  • Pita bread 4 pieces
  • Garlic or Tzatziki sauce
  • Hotsauce

Preparation:

Marinade the meat:

  1. Cut the meat in 2.5 cm blocks, suitable to be put on a screwer.
  2. Mince the garlic, oregano and rosemarin as fine as posible.
  3. Zest the lemon and cut in half, juice 1/2 a lemon.
  4. Combine all ingredients for the marinade and stir a little bit.
  5. Leave in the fridge for atleast 1 hour, preferably overnight.

Making the dish:

  1. Prepare the skrewers with the meat.
  2. Heat up a griddle with some olive oil on medium high heat.
  3. Start grilling the skrewers until nice and brown.
  4. Cut all vegetables to desired size for assembly. My preference is pretty course cuts.
  5. Prep the pita’s to package or recipe directions.
  6. Assemble the pita’s with the meat, vegetables and sauce.
  7. Eat!
